Merguez is the spiced lamb sausage of North Africa, and it’s at its best cooked over coals until the edges char. Ours are made with our own Dorset Down lamb, so the meat at the centre of them comes from the same fields as every other cut we sell. Tuck them into flatbreads with yoghurt and herbs, or slice them through a pan of couscous.

Ingredients: Lamb (85%), gluten free crumb (9%) (rice flour, water, dextrose monohydrate, vegetable fibre, salt (contains E535 anticaking agent), caramelised sugar syrup, paprika extract), harissa spice (2%) (smoked paprika, tomato powder, ground cumin, red bell pepper powder, ground coriander, garlic powder, onion powder, chilli powder, chilli granules, chilli, ground caraway, black pepper, smoke powder), sea salt (1%), bovine casing (1%). Keep below 5°C. Cook thoroughly. Always stunned before slaughter.
