The little T-bone of the lamb: a nugget of loin on one side of the bone, a piece of fillet on the other, and a strip of fat round the edge that wants crisping properly. Simple to cook and an honest test of the meat underneath, and we’re happy for ours to be judged on them. Raised in Sturminster Newton and cut by BMV Butchers.
